Once you step into the real world of adulthood, your relationship with cooking changes. Unless you’re incredibly wealthy, blessed with passive income, or just happen to have endless free time, most days you just want to make something good without spending hours in the kitchen.
I was scrolling through social media the other day and saw a post of a woman making an elaborate corn and crab sushi bake with the caption, “Me every time I’m broke.”
I burst out laughing at the comments:
“Broke for what? As a university student, I must say the only cheap thing there is the rice.“
“Is the ‘broke’ in the room with us?”
“Can I be broke with you?”
It was a funny, gentle reminder of how out of touch online “budget recipes” can be. Growing up in a household with limited food choices taught me what real budget constraints look like. Today, while I have the convenience of ordering ingredients online, spending a fortune on fresh crab meat just to throw together a quick lunch isn’t high on my priority list 😂
Which brings me to this quick creamy corn and crab salad.
I was originally planning to make Corn Kakiage Soba (I’ll be sharing the detailed recipe for that one next!), but time wasn’t on my side. Instead, I grabbed trusty, affordable imitation crab sticks and paired them with sweet corn and my absolute staple: Japanese mayo.
It’s real-life budget-friendly, incredibly quick, and requires zero actual cooking. (And if you do have the budget to splurge on real crab, I’ve left some notes for you further down!).

Ingredients for Creamy Corn and Crab Salad
Fresh sweet corn kernels. I prefer fresh corn kernels for this one because I like the crunch. It’s also better than canned ones since it has no preservatives. But if you have no access to fresh corn, you can use canned corn.
Crab meat. If you can buy real crab meat, go for it! But if you’re like me who’s on a budget, use imitation crab sticks.
Japanese mayo. I suggest you use Japanese mayo, as for me, it tastes way better than regular mayo. If you’ll be using Kewpie Japanese mayo, it is also available in a reduced-fat version.
Yogurt. I used a local yogurt milk drink made from carabao milk that I bought from the grocery store, and it really improved the dressing! It’s totally optional, but if you want to use it, regular Greek yogurt works great for extra protein.
Light soy sauce. It balances the sweetness of the corn and adds a subtle touch of savory saltiness to the dressing.
Rice vinegar. It adds a bright acidity to cut through the creamy mayo. If you don’t have it, apple cider vinegar or white vinegar works just as well.
Nori strips. Don’t skip this one! It adds that signature savory, umami flavor that ties the whole salad together.
Toasted sesame seeds. I usually just have this in my kitchen cabinet, as I love the smell of toasted sesame seeds. They bring a nice nutty aroma and a bit of extra crunch to every bite.
How to Make Creamy Corn and Crab Salad
Start by boiling the fresh corn kernels for 2 to 3 minutes, then drain them completely and set them aside to cool. If you are using canned corn, just give it a good rinse under cold water and drain it well to remove any excess liquid.
Next, prepare the imitation crab sticks. Cut each stick in half first, then gently pull the fibers apart to shred them into thin strips.


Transfer the shredded crab into a mixing bowl along with the cooled corn. Then build the creamy dressing right in the bowl. Add the Japanese mayo, light soy sauce, rice vinegar, and the yogurt for that bright, balanced base.


Sprinkle in the toasted sesame seeds for crunch and top it off with the nori strips.


Then give everything a gentle, thorough toss until the corn and crab are evenly coated in the dressing.

For the best flavor and texture, cover the bowl and let it chill in the fridge for at least 15 to 20 minutes before serving. This gives the cold ingredients time to settle and blend. Transfer to a plate or serving bowl, and enjoy!

Notes
For the best texture and flavor, make sure your boiled corn has cooled down completely before tossing it with the rest of the ingredients. Warm corn will thin out the Japanese mayo and yogurt, making the dressing runny instead of rich and creamy. If you are prepping this ahead of time, hold off on adding the nori strips until right before serving so they stay crisp instead of soft.

- Refrigeration. Once mixed, the salad will stay fresh in an airtight container in the refrigerator for up to 2 days. Give it a quick, gentle toss before serving to redistribute any dressing that settles at the bottom.
- Keep the toppings crisp. If you’re prepping this for meal prep or expecting leftovers, hold off on adding the nori strips and toasted sesame seeds. Keep them in a small zip-top bag or container and sprinkle them on top right before eating so they stay perfectly crunchy instead of getting soft in the fridge.
