Lemon Tuna Kale Salad is a fresh, nourishing meal with crisp greens, flaky tuna, and a bright lemon vinaigrette.


I made this because my body really needed a good, fresh boost. It’s always a relief to use up leafy greens before they lose their crispness, especially since my fridge drawer has definitely claimed a few victims in the past. Instead of letting this haul go unused, I turned it into a simple, delicious salad.

This recipe was born out of a lucky find. I was over the moon when I stumbled upon fresh kale at our local wet market. You can just imagine how thrilled I was, weaving through the crowded, humid aisles and enduring the sticky, sweltering heat just to bring this bundle home.

How to Make Lemon Tuna Kale Salad

In a large salad bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper until emulsified.

Add the chopped kale straight to the bowl. Wash your hands first, then use them to massage the leaves with the dressing for 1 to 2 minutes. Your hands are genuinely the best tool for this, as the warmth and pressure break down the tough fibers so the kale becomes tender, turns a deeper green, and loses its raw bitterness.

Add the drained tuna, cucumber, tomatoes, and red onion. Then, toss or combine everything gently so the dressing evenly coats all the fresh ingredients without breaking up the tuna too much.

Pat your cucumber and diced tomatoes dry with a paper towel before adding them. Extra moisture dilutes the dressing, so drying them off keeps the lemon vinaigrette bright and clinging to every leaf instead of pooling watery at the bottom of your plate.

Ingredients
  

  • 150g fresh kale stems removed and leaves chopped
  • 1 can chunk tuna in water drained
  • 1 small cucumber thinly sliced
  • 1 small red onion thinly sliced
  • 2 small tomatoes diced
  • 2 tbsp grated Parmesan or crumbled feta optional

For the vinaigrette:

  • 2 tbsp extra virgin olive oil
  • tbsp fresh lemon juice

Kale gets better in the fridge. Unlike delicate leafy greens, dressed kale actually holds up well overnight in an airtight container. The leaves soften even more as they sit in the vinaigrette without turning soggy.

Additional Notes and Tips

  1. Try different greens. If raw kale is too tough for your taste, swap half of it for baby spinach or chopped romaine. You won’t need to massage those greens, just toss them right in before serving.
  2. Mix up the protein. Salmon or drained chickpeas all work great with this exact lemon vinaigrette if you run out of tuna.
  3. Tone down raw red onion. If red onion feels a bit too sharp or strong, soak the thin slices in a small bowl of cold water for 5 minutes before tossing them into the salad. This removes the harsh bite while keeping the fresh crunch.
